Pilot is a fantastic brewery located in Leith, Edinburgh. The founders Matt and Patrick met at the industry renowned Brewing and Distilling Masters at Herriot Watt University and decided to start a brewery together – not a bad idea it turned out to be in the end!
Pilot Brewery prides itself on its hands-on approach, managing everything in-house from brewing to branding. This approach ensures high quality and integrity in their beers. They focus on crafting unique, flavourful beers, avoiding finings and filtration to preserve maximum flavour and aroma.
Sustainability is a key focus for Pilot Brewery. In 2014, they became the first brewery in Scotland to eliminate isinglass finings, making their beers vegan-friendly. They source their base malt exclusively from Scotland and brew and package on-site to minimize their carbon footprint.
Pilot Brewery offers a diverse range of beers to suit all palates. Their core beers are complemented by a rotating selection of experimental brews, reflecting their belief that beer should be fun and inclusive.
If you want to take a closer look, they run weekly brewery tours every Saturday. Over the 1.5-hour tour, you’ll learn how the beer is made and get to taste a variety of their freshly brewed beers. Definitely a worthwhile activity if you are spending a weekend in Scotland’s capital!

Peach Melba Sour (4.3 % abv): One of Pilots flagship and most iconic beers. This beer will have you reminiscing of that old dessert your granny used to make. Full of peach, raspberry & vanilla flavours, a great one for any sour beer lover.
Pineapple Berliner - Sour (3.4% abv): An experimental Berliner Weiss style sour beer. This is a proper creative creation from the guys at Pilot. Extremely sharp sour flavours with a whole load of pineapple thrown in. A real quality sour beer.
Cocoa Morello - Stout (Ale 7.1% abv): A deliciously rich sweet and decadent stout. With chocolate and cherry nodes this stout seriously packs a punch. Not one to be missed if you like your stouts.
